Love Lies Bleeding Amaranth grow tall, sturdy plants with bright green leaves and long hot pink flower tassels. Not only ornamental, amaranth is also edible. The young leaves can be eaten raw, while the mature leaves are better cooked. The cooked amaranth grains can be used in soups, stews, or raw grains ground into flour for baking. Plus, the stunning flowers make an excellent cut flower for any arrangement.
